MUKAWEN - مكون

مشروع "مكون" هو تعاون بين مجموعة كسبرة (مريم بقطر ونور كامل) وآني جول ورنا النمر حول الطعام في المطبخ المصري بدعم من مفردات من خلال منحة التنظيم الذاتي. تقوم المجموعة بالاشتراك مع فنانين وطهاة وباحثين بتنظيم وتحضير وتقديم سلسلة من موائد الطعام على أن تكون كل مائدة منسقة حول مكون له أهمية تاريخية أو اقتصادية أو ثقافية له اطلالة متميزة في موائدنا. نشرع في تصميم قائمة الطعام والبحث في الوصفات التاريخية والدارجة والشخصية وتحضير الطعام بشكل تشاركي ومن ثم ندعو المهتمين والمهتمات بالأكل سواء بشكل شخصي أو مهني للانضمام لنا حول المائدة. نأكل ونشرب ونتشارك الوصفات والقصص والأساطير والأغاني، نتتبع الجغروفيات والأياد المنخرطة في اطعامنا، في محاولة هضم واستيعاب ما نضعه في بطوننا بكل ما يحمله من تاريخ دسم من الهجرة والتبادل والاستعمار والعنف والحنية وغيرها من المكونات المرئية والغير مرئية.

Mukawen is a project organized by Kusbarra Collective (Mariam Boctor & Nuor Kamel) in collaboration with Anny Gaul and Rana El Nemr on contemporary Egyptian culinary practices. Kusbarra Collective is working with artists, chefs and researchers to organize, prepare and present a series of community meals, each curated around a specific ingredient with historical, cultural or economic significance that features extensively in our everyday meals. Together with our collaborators and contributors, we are designing menus, researching historical and familial recipes, and cooking collaboratively. We invite guests to gather with us to eat and drink together, share recipes, stories, mythologies and songs to trace the geographies and the hands entangled in feeding us. In an attempt to digest and integrate all the rich histories of migration, exchange, colonization, violence, care, and all the other visible and invisible ingredients that go into the foods we eat.
